My children Antoine, Sam, Peter, Andrea and a few friends asked me to share some of my favorite recipes knowing that I like country food, simple delicious healthy meals made without spending much money or time using mostly local seasonal produce.
Please contribute your own favorite recipes that fit a student budget and are good for body, soul and the planet.

Happy Birthday Antoine! Basic salad dressing


Mummy's recipe:

1 tbsp apple cider vinegar

¼ tsp fine sea salt

¼ tsp ground black pepper

1tsp crushed garlic or paste

1tsp Dijon mustard

1tsp chopped Italian herbs

3 tbsp olive oil


You can substitute lemon or lime juice, balsamic, red wine vinegar, rice vinegar, raspberry infused vinegar to the apple cider vinegar.

You can substitute yogurt, grape seed oil, peanut oil, vegetable oil to the olive oil or add a tbsp of walnut oil or sesame oil to vegetable oil for flavor.

Feel free to add 1 tsp anchovies paste, chopped cilantro, or other herbs for flavor. The proportions can vary with taste.

Antoine likes more vinegar and less oil, you decide.
